The Carbon Tax

Last week the BC government introduced a carbon tax which was definitely a good first step towards dealing with climate change but the media coverage, especially on TV, was incredibly slanted. TV news either didn’t bother communicating any reference points on how costly the tax would be and who it would impact but they also largely interviewed people who didn’t like it when research has always been that people were highly in support of a carbon tax.

So a few things…

1. It’ll cost too much. – Wrong. It’s 2.4 cents for a litre of fuel and eventually it’ll be 7.2 cents a litre. If you drive 10,000kms a year and drive an average car (like a Honda Accord) this will cost you $24 this year and eventually it’ll cost you $72. You drive a 507 horsepower Mercedes E63 and drive 20,000kms a year? It’s be $72 this year. Rats! It’ll cost you one nice dinner a year to pay for the carbon tax this year and about 3 nice meals a year down the road. Boo fucking hoo.

2.It hurts the small guy, consumers. – Fuck you it does. Do you have 100 cars in your fleet that are driven upwards of 30,000kms a year? Do you run diesel generators all day long to provide power for your construction crew? Do you drive dump trucks and run heavy equipment all day long? NO. YOU. DON’T. Big businesses who use fuel are the ones who are going to be paying the most and now they have an incentive to reduce their fuel costs cause they’re going to see 5-6 digit increases in their fuel bill. You are seeing a 2 digit increase.

3.I live in the burbs and there’s no transit option. Fuck you again. You made your choice. And you still have choices. You can drive a more fuel efficient car. That V6 you got for your 4 door sedan? You didn’t need it. (Note: Swapping from the V6 Accord to the 4 cylinder Accord only saves you about 10% in fuel costs) That 400hp V8 for your pickup? Get the V8 that’s one size down, you won’t notice it unless you’re hitting the redline regularly. Heck, get the V6! Or get a smaller pickup.

So go shut up and pay your taxes.

Brine your meat

You should eat pork or chicken without brining them. Brining makes it all good. There are some exceptions like the wings or pork belly but otherwise all the meaty parts of a pig or a chicken should be brined. A brine is just water, salt and sugar. In some cases some people add other things in like peppercorns or rosemary but I’ve found that the flavour doesn’t soak in as well and you’re better off seasoning on top instead.

Recipe:
2 cups water
1/2 cup kosher salt
1/2 cup white sugar

Dissolve salt and sugar in water and cool. Add meat. For each inch of thickness brine for 2-3 hours – a pork chop is a 2-3 hour brine, don’t over brine by leaving it in for more than 4 hours. If you don’t have kosher salt you can use regular salt but regular salt is twice as strong as kosher salt so use half as much salt. If you need to leave the meat in for longer (say, an entire workday) cut the brine to half strength instead. If you plan on applying a rub to the meat cut the brine to half strength as well or the meat will be too salty.

When ready to cook, drain meat and dry. Grill or pan sear. Brined meat cooks a bit faster as well – about 15-20% faster so shorten your cooking times as needed.

This will be the juiciest, tastiest pork chop you’ll ever eat.


Upshift

Full throttle, high rpm (>5k rpm) upshifts feel awesome but are really bad for gearbox/clutch. I wonder how much extra wear I’m putting on the transmission because of this. It’s pretty addictive.


Elevator Buttons

The elevator buttons in my building have been vandalized several times by people (they put the button into the housing) and as such the building management has installed a tougher set of buttons that aren’t easily vandalized. The problem with the buttons is that they are smooth steel and they are convex which means if you try to press it your finger/thumb will slide right off of it.

It’s a pain to use.

Of course I notice all elevator buttons now and can’t help but think that they’ve never had a designer create the buttons. Friendly buttons should be slightly grippy, perhaps rubberized, and they should be slightly concave so fingers stay in place.

Doesn’t anyone do design anymore? Does Steve Jobs and Jonathan Ive need to get into elevator design? What are the buttons like in the Apple Store on 5th Avenue?

A few days of icing it along with a return back to just riding the bike seems to have fixed the problem. Will test the elliptical again in a couple weeks to see if it was the problem or not.
